Champagne Vinaigrette with Gorgonzola Cheese

Delightfully Light Summer Dressing

1 Shallot Finely Diced
1 Clove Garlic - Pressed
1 Tablespoon Dijon Mustard
2 Tablespoons Sugar
2 Pinches Kosher Salt
2 Pinches White Pepper
1/2 Cup of Champagne Vinegar or White Wine Vinegar
1 1/2 Cups Canola Oil
1/2 Cup Crumbled Gorgonzola Cheese

Mix all of the above ingredients in a blender adding the canola oil slowly at the very end. Refrigerate for at least 2 hours for the ingredients to meld. Keeps well.
